Pinky one

Being back from holidays couple of weeks now and getting to grips with the routine.

Being back into my kitchen habits and preparing loads of healthy snacks since my kids went back to school.

I saw those on Insta feed a while back and just had the time and mojo to prepare them.


50g dates

100g rolled oats

50g shredded coconut

1 teaspoon coconut oil

150g strawberries hulled

1 tablespoon coconut jam

1 tablespoon peanut butter (optional)

10g puffed millet or amaranth

1 teaspoon chia seeds (optional)


Place all ingredients in a food processor / blend everything.

Take a spoonful of the mixture and roll into a ball. You can also put a frozen strawberry or raspberry (as I did) or something else in the middle if you want.

Roll each ball in the shredded coconut and store it in airtight container in the fridge or freezer.

You can also put them in paper mould as I did in the second picture and put some melted dar chocolate on the top and sprinkle with dried raspberries, fresh/frozen blueberries or sprinkle with grind pistachio nuts.
